Rename docker image from latex_docker to scads_latex_docker or similar

Listing docker images with docker image ls also shows latex_docker. The name does not indicate, that it is related to the ScaDS.AI LaTeX template, so that somebody might accidentally delete it. To avoid that, we should add a reference to ScaDS.AI somehow.
